Growing Conditions

Dell Valley Vineyards is high elevation in the Chihuahuan Desert. Alluvial sandy loam soil. The valley receives 8 to 10 inches of annual rainfall but contains approximately 50,000 acres of irrigable farmland from the Bone Spring-Victorio Aquifer. Dell Valley is bordered by Linda Lake salt basin to the east and the Diablo Plateau to the south, west and north. It is extreme winemaking out in far West Texas!

Aging

The wine spent 24 months in 60% new French Oak, 40% Neutral Oak.

Appearance

Garnet color, with lighter ruby edges.

Food Pairing

wagu beef, wild boar, or aged Gruyère.
