On the pallet, strawberry candy, birch, rose, and sea spray.

Growing Conditions

100% Texas grapes with the bulk of it from the Vintage Press Vineyard in Stonewall, TX and the La Pradera Vineyard in the Texas High Plains to give it that distinctive aroma and spice.

Winemaking

95% Cinsault, La Pradera Vineyards; 5% Moscato Giallo, Dell Valley Vineyards. Direct press, stainless steel fermentation and aging.

Appearance

A Medium-intensity ruby pink wine.

Food Pairing

Salmon with cherry glaze, turkey club, foie gras, and fontina or freshly made mozzarella. Why? The uniqueness of this wine and its many components mean that a simple dish with few components may be the best compliment to this wine's complexity.
