Palate

Aromatically, this isn't the most-giving wine, but it has elegance and freshness on the palate. There are spiced currant fruits, white plums, clove, sage, and sandalwood, and the wine is lean with good energy, tension, and drive.

In 2016, Doug Wilcox planted 12 acres of grapes near Hye, Texas, in the Texas Hill County AVA. The Texas hill Country is the largest designated grape-growing region in Texas spanning 9 million acres, and is home to some of the oldest soils in the United States.

Winemaking

Known for its powerful structure, Tannat in Texas is worthy of aging while remaining accessible in its youth - mature with a playful fruitiness.

3-day cold soak with the skins. Fermented in stainless steel tank for 7 days.

Aging

Aged in large format oak fermenter for 6 months, then aged in 100% neutral oak barrels for 26 months more.

Food Pairing

Red braised pork belly, katsu chicken, and grain-based dishes such as lentils with chanterelle mushrooms.
