Winemaking

2023 Bella – Oldest daughter Isabelle’s namesake wine returns with a new estate blend dominated by Aglianico (70%), with Malbec, Tempranillo and Viognier (each 10%). The blend of varieties has changed but the innovative winemaking method that produces a lighter, lifted red wine experience continues.

Limiting skin contact to 60 hours during fermentation produces a less extracted wine that presents a medium garnet color.

Perissos Vineyard & WineryPicpoul Blanc

Grown in our estate vineyard just feet from our winery and tasting room. Picpoul means “stings the lip” in French because of the grapes' naturally high acidity. On the palate notes of green apple and citrus heighten a light to medium bodied wine. The clean, crisp acidity pairs perfectly with fried appetizers as well as light seafood dishes from oysters to sushi. This wine is meant to be drunk young so chill a bottle tonight and enjoy.

Winemaker Brent’s top award winning Rhone blend is back, and the 2023 vintage is better than ever! Pape Blanc marries the stone fruit and white flower aromatics of Viognier with the rich, honeyed body of Marsanne and the clean golden apple and pear hints of Roussanne to create a wonderfully complex, balanced white wine. The medium gold color compliments a nose of honeysuckle, peach, apricot, pear and honey with warm spice notes. The mouth feel is full and viscous with medium acidity. Essences of tree and stone fruit are balanced by citrus rind, honeycomb and baking spice from oak and Acacia aging. The finish is clean and lingering with peach, citrus rind and honey. Rich shellfish and seafood dishes, creamy chicken preparations and tagines are natural accompaniments.

The 2020 vintage of our two-year barrel aged Cabernet Sauvignon offers a brilliant deep ruby color and an assertive nose of black cherry, red and black currant and cedar with baking spice, caramel and smoky vanilla notes typical of this varietal. The mouth feel is substantial, with solidly structured tannins, medium plus acidity and vibrant fruit and spice. The finish is long and redolent of black currant, black cherry and oak. Well marbled red meats - grilled, pan seared or braised - find their natural accompaniment and compliment with this big, lush wine.

We’re excited to release our first Estate Aglianico, finished from the portion of fermented juice that has been mechanically pressed from the skins and seeds. Press fraction wines are so named because the portion of juice pressed from the crush must be skillfully managed to extract smooth tannins and color elements while avoiding bitter compounds released when mechanical pressure is excessive – only a fraction of the available pressure is employed. This wine is a testament to great wine making skill, exhibiting a rich ruby color and a nose full of fresh red and black cherry and red plum fruit, with nuances of red flower, vanilla, caramel and baking spice. On the palate, the wine compliments the fresh red fruit aromatics with a lively acidity, a full mouth feel and a robust yet smooth tannin structure. The finish is long, clean and satisfying. Our Press Fraction Aglianico awaits pairings with grilled red meats, barbeque, savory charcuterie and bold, hard cheeses as well as classic Italian tomato sauced dishes.

A perennial Perissos favorite makes its long anticipated return with a perfect wine compliment for this time of year. A rich medium gold in hue, our newest Viognier offers a classic honeysuckle/white flower, ripe peach and honeyed apricot nose that reminds us of Texas springtime. The mouth feel is full and viscous, with the honeyed stone fruit themes and melon notes continuing, balanced with a medium acidity and a rich, clean finish. This wine is an ideal pairing with shellfish such as lobster and shrimp and does very well with fatty fish including salmon, white meats like chicken and pork as well as exotically spiced Asian dishes that respond well to such an aromatic wine.

Perissos Vineyard & WineryAglianico Rosé

Aglianico is typically associated with full bodied, well-structured and ageable red wines. This rose reveals another side of Aglianico, a lighter and crisper style created by the Saignee method which utilizes fully ripe fruit and brief skin contact during fermentation. The result is a stunning medium copper – salmon color wine that welcomes you with a nose full of fresh strawberry, grapefruit and orange rind, with melon and white flower notes. On the palate, the experience is light and refreshing with the fruit and floral aromatics of the nose lifted by a bright acidity and subtle pear hints. The finish is clean, making Aglianico Rose an excellent pairing for a wide variety of foods ranging from raw shellfish through soft cheeses, salads and seafood, chicken and lighter pork entrees.
