Palate
On the palate, the aromatics are confirmed with rounded tannins, a bright acidity and a medium mouth feel followed by a clean, savory finish.
Winemaking

Some Italian versions of this wine can be quite rustic, but there is a nuance and delicacy here – in part due to two years of barrel aging - that creates a wonderful sipping wine as well as the classic accompaniment to Roman dishes such as Pasta Carbonara and Bucatini all’Amatriciana as well as a variety of tomato sauce based entrees, grilled and braised red meats, salumi and savory cheeses.
