Perissos Vineyard & WineryAglianico Press FractionWe’re excited to release our first Estate Aglianico, finished from the portion of fermented juice that has been mechanically pressed from the skins and seeds. Press fraction wines are so named because the portion of juice pressed from the crush must be skillfully managed to extract smooth tannins and color elements while avoiding bitter compounds released when mechanical pressure is excessive – only a fraction of the available pressure is employed. This wine is a testament to great wine making skill, exhibiting a rich ruby color and a nose full of fresh red and black cherry and red plum fruit, with nuances of red flower, vanilla, caramel and baking spice. On the palate, the wine compliments the fresh red fruit aromatics with a lively acidity, a full mouth feel and a robust yet smooth tannin structure. The finish is long, clean and satisfying. Our Press Fraction Aglianico awaits pairings with grilled red meats, barbeque, savory charcuterie and bold, hard cheeses as well as classic Italian tomato sauced dishes.
