Nose

Aromatic on the nose, with lifted notes of lemon drop, sweet grass, and raw white almond with depth from Greek yogurt, flint, and bread.

Palate

The wine’s texture is round, but silky, and with a dry, chalky finish. Pleasantly dry throughout.

Planted in 1975 by Andy Martin, the owners define Martin’s Vineyard as the oldest continuously running commercial vineyard in Texas. Today, it is called Boxing Rabbit Vineyard and has 30+ acres planted to eleven grape varieties. Current owners Preston and Kelly Alison are reviving these old vines to ensure they can express their maturity through wine.

Hand-picked early over 2 days.

Winemaking

Press fractioned twice and fermented separately in 50% stainless steel tank and 50% neutral white oak barrels. Second fermentation spurred in bottle. Stayed 18 months on the lees. Riddled, then disgorged April 2026.

Resealed with 4.00 g/L dosage.

Appearance

Lightly golden in color with a fine bubble.

Food Pairing

Pair with salty and fried seafoods, pork dishes, Thai food with green vegetables or onions, and a vein of bright acidity - with or without spiciness.
