Situated in the rolling hills of central Texas where the Pedernales River meets Grape Creek, Signor Vineyards is owned and operated by a fifth generation Texas family, continuing heritage of horticulture, farming and ranching.  Our passion is in growing premium varietal fruit and the crafting of exceptional soulful wines each one reflective of the unique terroir from which it comes.  We are honored to share the fruit of our labor with you.

Originally enrolling at Texas Tech University with plans to attend medical school, Michael Barton discovered a course in Viticulture and Enology that completely shifted the trajectory of his career. With a lifelong passion for science and gardening—and a strong foundation in biology, chemistry, and nearly seven years of Latin—wine quickly became the perfect intersection of interests. The historical depth of winemaking, especially its expansion through the Roman Empire, added a compelling layer of cultural resonance to the science of the vine.

After completing foundational courses in viticulture and winemaking, Michael approached Llano Estacado Winery in 2012 in search of hands-on experience. Executive Winemaker Greg Bruni insisted that before stepping into the cellar, he first learn how to sell wine—an experience that began in the tasting room. By the 2013 harvest, he joined the cellar team and worked under Head Winemaker Jason Centanni until 2016, gaining deep experience in large-scale production and Postmodern Winemaking practices.

Michael’s winemaking style is rooted in classical methods, always beginning with the vineyard. He favors a minimalist approach that allows the fruit and terroir to shine through. Premium oak and techniques such as sur lie aging are used to develop mouthfeel and balance. For Michael, great wine is the harmony of acidity, alcohol, glycerol, tannins, and fruit—each element supporting the others.

In addition to winemaking in Texas, Michael has crafted wines in Colorado, with a particular focus on Cabernet Franc. Bordeaux varieties remain a favorite for their expressiveness across different soils and microclimates. In Texas, Rhône white varieties have proven especially well-suited when picked and blended with intention, producing elegant, climate-resilient wines.

Say ciao to summer with our Italian blend from Signor Vineyards — a medium-bodied stunner made for the Texas heat. Bright raspberry and pomegranate lead the way, softened by violet and a kiss of cherry on the finish. Perfectly balanced with just the right touch of acidity and spice — it’s your go-to red when the sun’s still high.

Our Estate Tannat is a true reflection of the unique terroir at Signor Vineyards, offering rich notes of blackberry layered with cocoa, blueberry, black olive, and a touch of oak.

Light bodied with herbal notes as well as currant , Blackberry Dark Cherry and Vanilla.


Mourvèdre Blend

Rosé

Perfect for summer sipping!  Grapefruit and light strawberry notes.  A medium bodied Rosé.

Bright citrus with notes of white peach, guava and apricot.


Vibrant and citrus forward with a hint of herbaceous notes.

Medium bodied with notes of red fruit and baking spice.

A great wine for every palate, white Cherry, Red Apple & Thai Basil
with Delicate raspberry married with zesty acidity.


This particular wine also highlights our unique terroir here in the Texas Hill Country with smoky, hickory notes and soft notes of leather. Well balanced with notes of black cherry and tobacco.

smokey plum, pepper and spice as well as deep and rich with great tannins.  This is a stellar barbecue wine. 



 Albarino  not the typical maritime influence as we know in West Texas but it does retain those crisp fruit and citrus notes that pair exceptionally well with seafood, especially scallops.
One of my favorite pairings with Albarino is sushi or ceviche.  


Our Bordeaux blend.  Blackberry, leather, bramble berry with an elegant finish. 

Fuji apples & lemon basil.  Light to medium in body, medium acidity, long, seamless finish

Bright cherry and sweet balsamic with an herb and raspberry finish.  This light bodied red is built perfectly for Texas summer sipping.
