Growing Conditions

Grown on our estate vineyards in the Texas High Plains AVA at 3,500′ elevation, where warm days and cool nights allow Dolcetto to develop bright fruit, balanced structure, and natural acidity.

Food Pairing

Herb-crusted pork loin, pizza, crispy potatoes, charcuterie, and Manchego. Serve slightly chilled and decant gently.

Nose Aromas of black currant, dark cherry, cedar, and subtle cocoa unfold with hints of toasted oak and crushed herbs. Palate Full-bodied and structured with firm tannins and concentrated black fruit. Layers of cassis, dark plum, and cocoa are framed by oak spice and mineral depth, finishing long and refined. Growing Conditions 100% Estate-grown Cabernet Sauvignon from the Texas High Plains AVA Food Pairing Excellent with grilled ribeye, herb-crusted lamb, or roast duck with portabella mushrooms. Also pairs beautifully with aged cheddar, mushroom risotto, or dark chocolate desserts. Serve at room temperature and gently decant to allow the wine to open.
