Palate

The palate feels round, and is just full-bodied, with a lovely integration of oak, and a finish of fruit, cream, and sweet earth. The wine is restrained, lean and minerally rather than in your face oakiness.

Growing Conditions

Grown on our estate vineyards in the Texas High Plains AVA at 3,500′ elevation, where sandy soils, warm days, and cool nights help shape vibrant fruit, balanced structure, and natural acidity.

Food Pairing

Pancetta pizza, lamb meatballs, sweet gyro meat, sharp Italian cheese such as Asiago, and classic tomato-based pasta dishes with herbs and oil.
